A double process coloring is used by your hairstylist when you want to lighten hair more than two shades, for example to get  bleach blonde hair if your hair is currently a darker tone. It’s called double process color because it is a two-step process. Bleaching your hair is the first step, then your hair will be toned in order to achieve your color.
